Monday
Rack of Lamb Provencal
Colorado lamb roast to color then spread with Dijon mustard, garlic, bread crumbs, and red wine thyme demi glaze
Tuesday
Black and White
Filet broiled to color and served with red wine sauce then topped with butter poached lobster with spicy tarragon béchamel.
Wednesday
Beef Wellington
Tender filet stuffed with truffle butter wrapped in wild mushroom duxcell and baked in puff pastry
Thursday
Filet Hunter
Broiled filet mignon served with wild mushroom tarragon red wine sauce.
Friday
Pan Seared Ahi Tuna
Crusted with fresh ginger. Served over a bed of horseradish mashed potatoes. Garnish with soy lime ginger vinaigrette.
